Chocolate Christmas Cookies




We have fun making the cute Christmas cookie cutter shaped cookies with lots of frosting and decorations, but today I wanted to share 2 super easy, no bake cookies that you can make as well for the holiday.  You're sure to impress with these easy cookies as they taste so good, we always get compliments on them!  Everyone says the mint ones taste similar to the Chocolate Mint Girl Scout Cookies, yum!

 

For these 2 cookies all you need are 4 ingredients:

3. Peanut Butter
4. Peppermint Candy Canes


Directions for Chocolate Peppermint Cookies:

 1. Tear a large piece of foil and place on your counter to hold the cookies while drying.
2. Put half of the almond bark in a microwaveable bowl.  Microwave for 1 minute.  Take out and stir.  It will probably still not be completely melted.  Microwave for another 30 seconds.  Take out and stir.  (This should be enough time for the chocolate to be melted but adjust accordingly.  You just want to be careful not to overcook as the chocolate can burn pretty easily and it will not taste good)
3. Immerse the Town House crackers in chocolate, completely covering them.
4. Remove with tongs and place on the foil to dry.
5. Crush the peppermint candy canes and sprinkle some on top of each cookie to taste before they are dry.



Directions for the Chocolate Peanut Butter Cookies:

1. Repeat steps 1 and 2 above.
2. Spread peanut butter on each of the Town House Crackers.
3.  Immerse the Town House crackers in chocolate, completely covering them.
4. Set out to dry

Notes: Try dipping the crackers in the chocolate as quickly as possible so the chocolate doesn't harden.  You want to limit the number of times you have to reheat the chocolate for best results. I heat up half of the chocolate at one time because of this.

 One full bar of chocolate almond bark will make about 50 cookies.
